Hello!
My name is Craig Poku (he/they), a Londoner, turned adopted Northerner and now back in London, who has several fingers in many pies (pun totally intended). If you have a love for all things food, enjoy bold flavours and want to learn more about Afro-Caribbean heritage, this is the place to be! Whether that’s recipes or in-depth foodie thoughts, this space will aim to help you take your creations to the next level.
Fun fact, I have a PhD. In what you may ask? Clouds (yes, I’m being serious, and if you’re interested you can find more about it here). Doing a PhD is no easy ride and at several points throughout, I was asking myself “why did I choose the path of pain?”. Anyways, at the end of 2018, it got really bad. Now previously, my coping strategy was to solely binge watch trashy telly (confession, this hasn’t really changed). Only this time, I chose to change my strategy and instead, I started making bread and documenting it on my Instagram page, Pokubakes.
I have no formal training in cooking, so when I say that my early bread loaves were a choice, they were a choice indeed. Through many failed attempts though, I became more confident in the kitchen and started expanding my baking repertoire. I then started to experiment with bold flavour and design and now I want to show the world that bread and pastry can be a passion for everyone. And this includes you!
I have been fortunate to use my platform to share my creations, talk about social injustices, and discuss my inner thoughts on all things food & culture. And despite me having a full time job as a data science consultant, I am also always excited at the prospect of collaboration in the food space. These collaborations can include me giving talks, film and TV appearances, as well as food writing!
